Italian-Style Meat Loaf stuffed with Mozzarella

Ingredients
Directions1. Rip the bread into medium chunks and place in a mixing bowl with the meat § Add the eggs, milk, paprika, garlic powder, salt, hot chili powder or cayenne, oregano and rosemary § Mix everything together well 2. Grease a meatloaf pan with half the olive oil § Shape the meat into a log and place in the greased pan § Cut a big wedge mozzarella about 2”x5” piece and push it into the center of the meatloaf § Cover over the cheese with the meat 3. Cut the bell pepper into squares and dice up the green onion – spread around the meatloaf 4. Drizzle a bit of oil and salt over the peppers and green onion Prepare the Topping5. To the tomato sauce, add the mustard and hot sauce 6. Stir well and do a taste test (adjust the ingredients to taste) 7. Spread the sauce across the top of the meatloaf Preheat your oven to 350. Bake the meatloaf for 60 minutes.Suggested SidesItalian meatloaf is beautifully accompanied with corn on the cob and green salad. Other suggestions include roasted potatoes, steamed rapini or dandelion greens. |
