Dating back about 8000 years, this prehistoric food has held its ground – and shape –  across cultures. In Egypt, lentils star in koshari rice, a favourite street food. In India, spiced lentils are cooked into a delicious dal. In traditional cuisine, lentils are used for bread, pasta and stews.

Celebrating lentils today, Foodies Galore prepared a luscious lentil
soup chock full of goodness. Thickened with potato, tomato paste and a bit of cornstarch, and spiced to perfection, this lentil soup is truly delicious.

Ingredients:

  • 1 and ½ cups of brown lentils

  • 1 medium sized potato, peeled

  • 1 large carrot, peeled

  • 1 large tomato

  • 1 chicken / vegetable bouillon

  • 2 or 3 Tbsp of tomato paste

  • 6 cups of boiling water

  • Either 4 cloves fresh garlic, minced or 1 Tbsp garlic powder

  • 1 tsp paprika

  • ½ tsp cayenne pepper

  • 2 Tbsp your favourite curry sauce

  • ½ tsp cumin

  • ½ tsp salt

  • 1 Tbsp cornstarch

  • 1 Tbsp butter / margarine

Directions:

Soak the lentils overnight.
Peel and dice the potato and carrot into tiny chunks.
To a soup pot, add the potato and carrot chunks.
Rinse the lentils several times, then add them to the soup pot.
Cut up the tomato into big chunks and add to the soup pot.
Break up a bouillon into the soup pot.
Add the tomato paste.
Add 6 cups of boiling water.
Add the spices.
Cover with a lid and simmer on medium heat for 10 to 15 minutes then turn the heat down to lowstir often and cook for 2 hrs.
At the end, thicken the soup with cornstarch and butter mashed together and stirred into the soup.
