Quinoa-Kale Salad

Quinoa-Kale salad is truly a superfood. Kale, quinoa, cranberries, garlic, lemon, almonds and other little surprise ingredients are included in this delicious recipe that is good for your mind, body and soul.

Ingredients:

  • 1/2 cup quinoa
  • 7 large stalks of kale
  • Add ¼ cup dried cranberries
  • Add ¼ cup dried pineapple, mango or apricots cut up in small chunks
  • Add ½ cup of sliced or broken almonds
  • ½ cup olive oil
  • 3 TBSP sesame oil
  • 1 whole lemon, juiced
  • 1 tsp salt
  • 1 tsp Dijon mustard
  • 1 tsp garlic powder
  • 2 tsp Siracha hot sauce

Method:

  • Cook ½ cup of quinoa with 1 and ¼ cups water and some salt

Tip: If you have a rice cooker, it is the easiest method to cook quinoa. Otherwise, cook on the stove top by bringing the water to a boil, cover with a lid and reduce the heat to low-medium for about 15-20 minutes.

  • When the quinoa is cooked, place it in a salad bowl and allow to cool.
  • Take about 7 stalks of kale – remove all leaves from stems and slice thinly.
  • Wash the sliced kale well and spin all the water out.
    • Add ¼ cup dried cranberries
    • Add ¼ cup dried pineapple, mango or apricots cut up in small chunks
    • Add ½ cup of sliced or broken almonds
  • Make a dressing as follows and add to the salad:
    • ½ cup olive oil
    • 3 TBSP sesame oil
    • 1 whole lemon, juiced
    • 1 tsp salt
    • 1 tsp Dijon mustard
    • 1 tsp garlic powder
    • 2 tsp Siracha hot sauce
  • Stir everything really well – cover and refrigerate
