Chicken Curry and Swiss Meatloaf Dinner

For this meatloaf combine 2 lbs. ground chicken with the following:

  • 1 and 1/2 cups breadcrumbs
  • 2 eggs
  • 2 Tbsp Dijon Mustard
  • 1/3 cup ketchup
  • 2 Tbsp Soy Sauce
  • 1/4 tsp salt
  • 1 Tbsp curry powder
  • 1 Tbsp garlic powder or 3 cloves fresh garlic, minced
  • 1 tsp each: Ground coriander, dried rosemary & ground ginger
  • 4 sundried tomatoes, cut into tiny bits
  • 1 tsp Siracha hot sauce OR try dicing 1/2 of a fresh green chili
  • 1 cup Swiss cheese, cut up in cubes

Assemble the dinner in a big baking dish as follows:

  1. Spread 1 and 1/2 cups of frozen green peas on the bottom of the dish
  2. Form the meat into a log and lay it on top of the peas
  3. With a fork, score (make lines) across the top of the meatloaf
  4. Drizzle lots of ketchup and some Dijon over the top of the meatloaf then spread evenly across the top
  5. Peel 2 big potatoes and cut into wedges – place around the meatloaf
  6. Make 1 cup of chicken broth and pour over the potatoes
  7. Sprinkle a bit of salt, black pepper and dried rosemary on the potatoes
  1. Cover with foil
  2. Preheat oven to 375 – when ready, bake for 70 minutes
