Savoury Italian Style Tomato Sauce and Meatballs

  1. First make a tomato sauce:
    • Empty 1 whole bottle of strained tomato into a sauce pot
    • Swish the bottle with about 2 cups water
    • Add 1 TBSP grated fresh ginger (and the same amount of fresh garlic if your gut allows it)
    • Add 1 TBSP white sugar
    • Add 1 beef bouillon
    • Add 1 tsp each: Rosemary, Paprika, Oregano leaves
    • Add 1/4 to 1/2 tsp each: Sea salt and either Cayenne pepper or Hot Chilli pepper
    • Cover the pot and simmer for 1 hour on VERY LOW heat – stir occasionally
  2. Meatballs
    • Mix into 1 pound lean ground beef/veal/pork (most Italian folk prefer a combination of ground veal and ground pork)
      • 1 egg
      • ½ cup either breadcrumbs or cracker crumbs
      • ½ tsp each: Oregano, Rosemary, Paprika
      • either 1 fresh clove garlic or 1/2 tsp garlic powder
      • 1 tsp sea salt
      • ¼ tsp black pepper
    • Roll into medium sized meatballs and add to the simmering sauce (after 1 hour)

NOTE: The meatballs only need about 15 to 20 minutes of simmering time in the sauce to cook.

  • Cook up your favourite pasta in plenty of well-salted boiling water. Lightly strain the pasta then immediately drizzle about a TBSP of pure virgin olive oil. Mix in a ladle or two of the savoury sauce then plate your pasta with an additional ladle full of meatballs and sauce.
